Simple desserts that are delicious, easy to prepare and versatile take homemade meals to the next level. Today, we’re sharing the secrets to a zingy lemon curd that is great on its own, spooned over just about anything or even as a filling for pies, tartlets and donuts. Round up these four ingredients for a bright and citrus-y treat in just seven minutes. We’ve adapted the simple recipe from one discovered via PBS.
Ingredients
1/3 cup Belgian pearl sugar
1 egg
1/3 cup fresh lemon juice
3 tablespoons melted butter
Zest of 1 lemon
Directions
1. Crush Belgian pearl sugar and whisk together with the egg until smooth in a microwave-safe bowl. Slowly stir in the lemon juice, butter, and zest.
2. Continue to whisk until mixture is completely smooth.
3. Cook the mixture in the microwave for one minute, then in 45 second intervals. Make sure to stir well and scrape down the sides between each cooking period.
4. Total cooking time will vary but shouldn’t last more than 3-4 cycles. The lemon curd is ready to eat when it is thick enough to coat the back of a spoon.
Allow the curd to thicken by letting it cool before serving. Spoon into serving containers for a stand alone treat or on top of your choice of baked goods—breads, pies, pancakes, liege waffles, anything! The lemon curd is a wonderful dessert component.
